RECIPE HotTot Casserole
So I dont typically like spicy dishes. I am the one that will cry about the smallest hint of spiciness. I have always been this way. But being pregnant has taken my taste buds to a different level. I had a craving for something a little spicy the other day and this is what I came up with for dinner.
What you will need
1 24 oz bag frozen tater tots
1 lb ground turkey
1 can tomatoes with chilies (I used the super hot Rotel)
1 1/2 cup nacho cheese
1 can cream of chicken
1 can corn
1 can black beans
1 12 oz bag Mexican blend cheese
1 pack taco seasoning
1 tablespoon garlic salt
sour cream for garnish
Preheat oven to 375
Start browning the ground turkey. Add garlic salt. Mix 1 cup of water with taco season and stir well. Pour into browning ground turkey.
Drain the tomatoes & corn. Drain black beans and rinse. Mix all together with the can of cream of chicken in a medium mixing bowl.
Place nacho cheese in bowl stir well.
Add browned ground turkey. Stir all together well.
Place into a 9×13 casserole dish.
Cover mixture with shredded cheese.
Add frozen tater tots on top.
Bake in the oven at 375°F until the tots are browned. About 35-40 minutes.
Add more cheese on top if desired and place back in the oven for 5 minutes.
Serve while hot and top with sour cream if desired.
